Cucumber sandwiches....

We LOVE these! Our cucumbers are just starting to come off and they are sooooooo yummy! se are so great with an afternoon tea(if you do that) or just as a light supper. Try them and let me know what you think!

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 (.7 ounce) package dry Italian salad dressing mix
  • 2 loaves French bread, cut into 1 inch slices or we use this recipe for homemade bread
  • 2 medium cucumbers, sliced
  • 1 pinch dried dill weed
In a medium bowl, mix together the cream cheese, mayonnaise and Italian dressing mix. Refrigerate for at least 6 hours, or preferably overnight.Spread the cream cheese blend onto slices of French bread. Top with a cucumber slice, and sprinkle with dill. You can make as many or few as you like. the cream cheese mixture keeps for about a week in the refrigerator so you can make them over and over again!

I'm glad I caught this post. We have cucumbers coming and this is a great way to eat them up! Reminds me of tea house sandwiches cut up real tiny. :)

I have to admit that any time I've heard "Cucumber sandwhiches" it has never really sounded good...but this recipe looks like something I'd like to try! Where would you get your protein in a meal with these though?

These are good, Chris! Really yummy...I never had thought much about the protein but I looked it up and the cream cheese has about 2grams in a serving (1 oz). You could add pink salmon to it; that's good or fry up some bacon and put the bacon bits in there (lots of calories, though!). I just usually fix them just like this and we have them with iced tea and most of the time, in the summer, berries with whipped cream for dessert. It's good, simple and easy. We love it and to be honest, my family eats so many that I don't think the protein really matters all that much! They are kind of a guilty pleasure with us! lol =)
