Chili Chicken tacos..



Got this inspiration first from Everyday cooking & then used Darcy's recipe because we felt Martha's was a tad too spicy!! Then I made some changes to Darcy's!! This is the final product:
2 lbs boneless, skinless chicken thighs (about 6) (I used 1 lb. thighs; 1 lb. boneless skinless breasts)
1 garlic clove, minced ( I used 2)
1/2 cup prepared salsa ( I used 1 can Rotel;( tomatoes & green chilis) because we don't keep salsa on hand; my hubby makes it fresh & I don't know his secret, so I used Rotel!)
1 Tbsp. chopped canned chipotle chiles in adobo sauce (1 Tbsp. was spicy enough!)
1 Tbsp. chili powder
kosher salt ( I used seasoned salt; about 1/2 tsp. because I did not have Kosher on hand)
ground pepper
Combine ingredients in a slow cooker. Cover; cook on high 4 hours (or on low 8 hours).
Shred chicken, moisten with a little of the cooking juices. Serve in warm flour tortillas with a little fresh lime juice, shredded white cheddar cheese, tomatoes, lettuce and sour cream
*This is VERY economical!! It made enough for 3 meals of tacos!!! Probably could have made more but my husband took what was left to work for lunch.
A favorite at our house & so easy to put together!! :)
